A small, golden colored heirloom bean, traditionally used in Mexico and Peru. Canary beans are considered the King of Beans by many Hispanic chefs because of their smooth texture and rich, buttery flavor. You can add a bit of epazote, also sold here. Soak beans overnight before cooking. Legumes are a good match for companion planting with corn, as they add nitrogen to the soil for the nitrogen-needy corn.
Plant in Spring. Harvest in Fall, dry, and store in glass.
