One of the prime peppers for making authentic mole sauce. The mulato pepper is a mild to medium poblano, similar to the ancho pepper, but with a smoky, fruity flavor. The ancho is a poblano that ripens to a deep red, while the mulato is a poblano that ripens to brown, then is typically dried before using. The mulato has been described as tasting somewhat like chocolate, with undertones of cherry and tobacco. Its heat rating is 2,500 to 3,000 on the Scoville scale.

Very popular in New Mexico cuisine in the US Southwest, where great food is created.
