(60 days.) American Heirloom that thrives on heat and humidity and is still a favorite in many southern dishes. Clemson is the traditional variety grown for centuries in the South. Light green pods consist of 5–8 points. Cream-colored flowers are also edible. Pods are excellent for use in soups, stews and relishes; fried, roasted or boiled.

An attractive ornamental, it does well in containers, and is a nutritious vegetable.

Soak seeds in warm water overnight to speed germination. Pick pods while young, and still tender.
