Chenopodium quinoa. An ancient Inca grain.
The plants are striking, a large percentage having the "magenta leaf" trait in the young leaves, and growing to 7' tall, many plants with bright red stems. The seed is vividly multicolored from jet black through chocolate, nut brown, buff, pink, cherry, yellow and white. Seeds are larger than many other varieties.
Both the red and white variety of quinoa have 170 calories per 1/4-cup serving. They also have roughly the same amount of fat per serving, with two grams for red quinoa and 2.5 grams for white quinoa. The carbohydrate content is also similar, with 32 grams per serving for red quinoa. While both types of quinoa are a good source of vitamins B-9, B-1 and B-6 as well as iron, magnesium, phosphorus and zinc, red quinoa is a better source of riboflavin, with 15 percent of the daily value per serving.
Originated in the Bolivian/Chilean area with introductions to Colorado, ca. 1980.
