One of two Asian corn varieties grown by this Fresno farm. This strain is mostly yellow, but some ears also have a splash of white kernels. Seed stock grown in CA, coming over with immigrants from Laos some years ago and passed on exclusively to White Buffalo Trading Co.
High gluten, waxy, sticky Asian Sweet Corn.
About five thousand years ago, corn from the Americas traveled to Asia and became much denser and higher in gluten. Now back in the Americas.
Separate Asian corn from other corns by at least 200 yards to prevent kernel cross-mixing.
Hard, dense kernels of Asian sweet corn must be boiled to 25-30 minutes to become edible.
