Annual. Very versatile Mexican vegetable green with nutritious seeds in the quinoa family. Flower clusters can be steamed like broccoli or fried in egg batter with mozzarella cheese. Young leaves are a mild spinach substitute, especially for those who must avoid the calcium-sequestering oxalic acid found in most other spinach. You can cook the seeds like quinoa.
