Padron peppers are typically harvestedwhen they are 1-1 1/2" long. When picked early, about one out of 20 fruits will be hot, and the rest mild. If allowed to mature, all the fruits become hot at 2-3" long.
Padrons are traditionally served as tapas (appetizers) in Spain, simply sautéed in olive oil with a little sea salt. Organically grown.
