Epazote has been used for centuries in Mexican cooking for nearly 9,000 years, as well as in traditional Texas cooking and cowboy cooking on the range, growing wild all over the Americas, as far north as Texas. Epazote is often used with all beans to flavor and to reduce gas that is a typical result of eating beans. Its pungent flavor and odor are hard to describe, but is unmistakable and somewhat intoxicating. Epazote is high in vitamins and minerals. Good companion plant to repel bugs. Used by the Maya, Inca and Aztecs.
