The long, white roots are very high in natural sugar and were once a major source of table sugar before sugar cane took prominence. They are good boiled or baked and then mashed, or they can be boiled down in water to extract the sugar. Or simply eaten like regular red beets.
The leaves are excellent for eating, being similar to chard, but tastier.
