Bellingham Blue sweet corn first appeared at the Annual Bellingham Seed Swap in 2009, and is thought to be descended from "Sweet Indian." The ears are a deep blue-black, with four to six small ears per stalk that are 4-7" long, that grow on very bushy 4-5' tall plants. This blue corn tastes a bit different from white or yellow sweet corns.

Bellingham Blue is an early corn. It makes a sweet, blue cornmeal that tastes great in cornbread. Stays blue even when it is sweet, fresh, or dried.

Does well inter-planted with Golden Bantam sweet corn.

The blue color comes from the aleurone layer of the kernel. It's like a thin sheet of blue cellulose located between the starchy endosperm ball and the hard outer pericarp. Genetically, blue corn means a white endosperm + a blue aleurone + a clear pericarp.

Grown by Shaman Don at NightShade urban farm.
